Stewed Edible Boletus
Ingredients:
80 dag mushrooms, 2 dag fat, 5 dag onion,
1 - 2 dag flour, salt, pepper, 1 tablespoon
of chopped dill and green parsley, 1/8l
of cream.
How to prepare:
Clean mushrooms, rinse carefully, chop thinly.
Melt fat, add peeled and cut into dice onion,
fry and put mushrooms, pour in 2 - 3 spoons
of water, stew under cover. When they are
soft add flour, boil (they should be thick),
add salt, pepper, cream, dill and parley,
stir, put into bowl.
Mushrooms with scrambled eggs and potatoes
Ingredients:
80 dag Mushrooms, 5 dag onion, 2 dag fat,
1/8 l cream, salt, pepper, 2 dag flour,
80 potatoes dag , 4 - 5 tablespoon of milk,
6 eggs, 2 dag margarine, 1 tablespoon of
chopped dill or green parsley.
How to prepare:
Clean mushroom carefully, rinse, cut into
stripes, put into saucepan, add fat, peeled
and chopped onion and stew for 30 40 minutes.
When they are soft, add flour, salt and
pepper and boil. Pour cream, add dill and
stir carefully. Rinse and peel potatoes,
then boil them and prepare purée. Stir eggs,
add salt and pour into frying pan with fat.
When they start to curdle, stir with spoon
preventing it burning. Put scrambled eggs
on warm round serving plate, put stewed
mushrooms on top and put potatoes purée
around.
Clear mushroom soup
Ingredients:
5 dried mushrooms, (preferably 5 dag boletus),
1 big portion of soup vegetables,1 spoon
of butter, 10 seeds of black pepper, 6 seeds
of allspice, 2 bay leaves, 1-2 teaspoons
of lemon juice, salt.
How to prepare:
Wash mushrooms carefully, put into cold
water and boil until they are soft (30-40
minutes). Next, take them out of stock,
cool and cut into thin stripes. Peel soup
vegetables, wash and cut into stripes, fry
on butter, pour 2 l of water, add bay leaves,
pepper and allspice. Boil for about 30 minutes
and then strain, add stock from mushrooms
and boletus, season with lemon juice and
salt. Serve with patties or toasts.
Baked mushrooms
Ingredients:
80 dag mushrooms, 3 dag fat, 5 dag onion,
salt, pepper, 1/8 l of cream, 4 - 6 dag
hard cheese, 2 dag butter, 2 dag breadcrumbs.
How to prepare:
Clean mushrooms, rinse, bigger ones cut
into smaller pieces but small ones leave
without cutting. Stew with fat, onion and
2-3 spoons of water until they are soft.
Evaporate sauce, add salt and pepper to
mushrooms, stir, put into small bowls or
on serving plate for baking, pour cream,
put grated cheese mixed with fried breadcrumbs,
sprinkle with butter. Put into oven and
bake.
